I did my own pasta sauce this last trip and it was delicious. I used the tomato powder from Packit Gourmet, added it to hot water to the consistency of tomato paste, added some spices (Italian spice, garlic powder, salt and pepper), then put in freeze dried tomatoes, mushrooms, and onion dices. It was very tasty, the ingredients weighed next to nothing, and it took almost no time to prepare.
We cooked up some cheese-filled tortellini to serve it over, but it would have been equally good over spaghetti or macaroni.
I ordered a bunch of things from Packit Gourmet this year, and we liked quite a few of them, but this was the one new thing that I tried that I am sure we will repeat.
I make my own using regular tomato sauce in a dehydrator on the sheets for fruit pastes.
Dehydrate it until the edges are crispy. The dust it with some corn starch and throw it in a small blender or coffee grinder. I use it for everything. When I want sauce, I add spices from my spice packs (usually a generic italian seasoning of salt, pepper, oregano, basil and parsley)
Lightweight, cheap and versitile.

I'll check out Packit Gourmet, but I do what Lorax does except I've not blended it. Remove sauce from dehydrator tray and tear into portions and place in plastic baggie. Rehydrate at camp in dinner.
Never thought to grind it though - usually I dehydrate it right with veggies in it and it's like a lumpy fruit rollup.

The main reason I grind it up is it's easier to use in certain circumstances like sprinkling on pizzas or my mini strombolis I make. I find it easier to gauge how much I'm using in powder form, but that's probably because I've been doing it so long.

I usually bring a big enough bag to cook my main meals with and plenty of extra to sometimes add a pinch or two to spice up an otherwise boring dish that is just missing something.
