OK - Here's an easy one :

Cheesy Bacon Hashbrowns
- Start with a package of dehydrated hashbrowns - reyhydrate
- Fry as normal ( add onions here if you like )
- Top with your favorite cheese and let it melt
- Top with heated, precooked bacon

A box of hashbrowns will feed two hungry people, maybe three. It's simple, packs lite and is tasty.

Boy Scout Veggies

Dice up one onion, six potatoes, and eight carrots, may add a pepper if you want
Mix them up with salt,pepper, or your seasoning and two tablespoons of butter
Separate into four to six portions
Wrap in foil and seal up tight, re-wrap again in foil to be safe,foil can tear
Place separate pouches on fire grate or coals turning them often
Cook for about 15-20 min
Open and eat right out of the foil

Another simple one - boil in bag rice. Feeds almost 2. Two bags will feed 3. When will they get this right?

Mac and Cheese with fresh onion mixed in. Will have this on every trip.

Knorr's brand Rice + Veggies is really tastey, packs light, cooks fast and is cheap. Perfect BW side dish and of the brands I've tried, Knorr's wins hands down.

We tend to go with Vigo brand rice (red beans & rice, black beans & rice, spanish rice, mexican rice, and chili if you can find it), and a second favorite brand is Knoor (formerly Lipton)that have all sorts of noodle and rice flavors.

We just got back from our annual trip. The kids loved the instant mashed potatoes we found that only required 2 cups of boiled water per bag. Each bag served 2 kids.

For ease (and to go with the fried fish):

Instant mashed potatoes (the kind you add only water to).
Sprinkle some fried onion strings over the top.

If you're looking for a quick shore lunch accompaniment.

To add to the boy scout veggies recipe above, these are excellent with hamburger in them. As a girl scout, we always called them foil dinners. I have seen recipes on here that call for dehydrated burger. I think that would work in this recipe.

We like any of the simple noodle sides

Also like to do Cous cous, very easy just add boiling water

Also really like getting a bag of Ceaser salad that we then eat the first night.

Cheesy Bacon Green beans

Take a bag of frozen green beans
1/4 cup dehydrated onions
1/4 cup bacon bits
2 tablespoons butter
1/8 cup grated Parmesan cheese.

Mix frozen beans, onions and bacon bits and butter and refreeze in freezer bag.
Put parmesan cheese in sealed baggie.

Put the bag of beans in a pot of boiling water for 7-10 minutes unit beans are cooked and hot. Remove from pot, add cheese and mix.

Makes a good side dish for fresh fish, chicken or beef dishes.

I am adding this article to "side dishes". It is about how long fresh fruits & vegetables may last on an extended trip & I am forever looking for it to reference.
