I'm looking for some good food ideas for someone that I'm bringing into the BWCA this year that has a gluten allergy. All suggestions are welcome. We need to figure something out since we have less than a month before we leave.

There's always rice. Many Lara Bars are gluten free. Most nuts, seeds, dried fruits should be OK. All processed/packaged foods you'll have to check the ingredients, but I would guess most foil meat/fish is probably OK.

There are some freeze-dried/dehydrated foods that are gluten free. You can even search specifically for those at Pack-it-Gourmet's website. They have quite a few actually. Most other manufacturers also have at least a few that are gluten free. You can find some other varieties at Wilderness Dining.

Quinoa is gluten free. Good substitute for rice.

I have celiac disease so I too must be gluten free. There are many products that are gluten free now. Take the person that has to be gluten free with you grocery shopping. They can read labels and help you out. One off the top of my head is Idahoan instant potatoes. They come in bags and they are cheap and actually very tasty. We make them in the house when we are short on time. They have many different varieties. Word of caution though one is not gluten free. I know that Walmart carries them. Could also take corn tortillas for a quicl lunch of peanut butter and jelly on them. Not quite as good as a flour one but it works.
