      Help, Gluten Free?

Am going to be leading a trip with students next week and have one who has a gluten free diet. In assessing our typical menu, not much of what we bring fits this bill. Am looking for some ideas for easy to make ideas for this young man, any thoughts?

I know that there are several different cracker options available using rice or corn flour. Otherwise Quinoa is a good option for a grain. It can be cooked like oatmeal if you're doing that for breakfast at all. Another product that is gluten free is instant potatoes. That would make a good side dish, and with the addition of some garlic powder or bacon bits it would be a good option for the entire group. Type "gluten free" in the site search on the left. I remember a thread about this topic earlier.

He and his parents probably know a lot about it - check with them. Quinoa, as already noted, rice, potatoes - basically any meat, fruit, vegetable that isn't processed. When they start adding things, it gets complicated.

I am gluten free as well and just got back from a trip on the 8th. Fresh food first day and breakfast. Instant grits like oatmeal packets work good...just add brown sugar They have gluten free oatmeal in packets too. Lunches of summer sausage and I brought gluten free crackers. Could do pbj on corn tortillas or gluten free wraps. Dinners (supper depending on where your from...lol) can be many options. Some of the freeze dried food is gluten free. Do a google search. Visit with the student and his/her parents. Gluten free is considerable easy compared to a few years ago.
