In the brain storming phase of planning lunches and need some ideas for sandwiches that can be eaten on flat bread. I've thought of the basic PBJ, tuna, or salami. What other ideas should I consider that pack well and don't need much if any cooking?

I know you specified flat bread, but have you thought of bagels? They last in a pack better and they are denser with more calories and carbs. Different types of bagels can make the sandwich taste different. Going from a sesame seed bagel to a garlic bagel can add some variety. Just a thought.

or instead of flat bread or bagels, you can use tortillas. We personally love honey and pbutter roll ups. Just make sure honey does not leak/spill in pack, its' also good in tea/coffee. Other butters are a change from pb as well, like cashew or almond butters.
Many hard salamis will keep without refridge for a few days no problem. Or if you are spicy, turkey or regular pepperoni are good.

I've been researching the Philmont food supplies and here is one of there lunches.
Mountain House chicken salad
Cache Lake makes some refried bean fillings also that are pretty tasty. I suspect you could dehydrate your own as well but not sure how well home dehydrated reconstitutes with cold water.

Chicken or tuna in a foil pouch, mayo and relish packets from a fast food joint, drain and mix in pouch - also quick and tasty. We'd done all trail foods for the first several years and were doing a long Q trip. I think we went from south east end of Falls Chain to a site in McKenzie Bay - dead tired - so had planned on the tuna salad for lunch but no energy to cook - the tuna salad was like manna from heaven that night. I think my son and I consumed two 7 ounce packets and several days of crackers. Squeezed in a mustard packet in second batch.

Tortilla + shelf-stable bacon + foil pouch chicken + packets of ranch and buffalo sauce from a fast food joint = :)
You can add a little cheddar as well if that's something you normally bring. I'm going to try adding in some dried greens this year as well.
