Great with fired fish.

Ingredients:
3 cups - Coleslaw, dehydrated
6 packages - Mayonnaise
2 tbsp. - White Balsamic Vinegar
2 tbsp. - Sugar
1/2 tbsp. - Salt
1/4 tsp. - Pepper

Directions:
Rehydrate coleslaw in a zipper bag with 3 cups of cold water for 5~10 minutes. Combine other ingredients in a bowl. Drain coleslaw and toss with dressing.

Serves: 2
Serving Size: 2 1 1/2 cups

And where does one get dehydrated coleslaw?

Cabbage & carrots, you can dehydrate the bagged cole slaw mix from the grocery store or harmony house has dehydrated cabbage & carrots in vacuum packs.

Come April 1 and I think I'll post about dehydrated Caesar salad. Who knows, maybe romaine will re-hydrate as other than green slime.

Not to detract from the cole slaw - worth a try and probably not bad - just would seem to lack a little crisp and cold in the greens. I liked the cache lake salads - rice and vegetables and Newman's Own dressings.

Why not bring a head of cabbage and a few carrots?
Instead of mayo we've switched over to a bottled sweet chili sauce that just rocks with fish taco's

I also dehydrate coleslaw slightly different I'll mix all except mayo refrigerate over night and then dehydrate, in camp add mayo and the water. Slaw makes for a great addition to fish tacos

I dehydrated the bags of coleslaw mix from Publix. It does have a little crisp to it. We did use it on some fish tacos and it was great. I might make try some asian salad this year.

I'm thinking the mix with the packet of dressing - just take it and dehydrate vegetables. I'd guess the vegetables dehydrated are pretty light.
