Has anyone tried taking summer sausage without dehydrating it? It can last for days without refrigeration, I was wondering what the longest anyone has done and had it still been good is.

We always take summer sausage. We usually eat it within two or three days after opening the package and have never had a problem, but we don't go in July and August. If the weather were terribly hot I probably wouldn't keep it more than two days after it has been cut.

I think years ago when we took longer trips I would keep it much longer, but again, once a package was opened, we usually would use it up in 2-3 days.

Serenityseeker and I took sliced hard salami in a deli pack into the BWCA last May and it kept for all 5 days of the trip without refrigeration. We had some warm sunny days during that trip but overall the temps were on the cooler side. That was presliced... usually with the boys I bring a whole salami and slice it up, but again we trip in Spring and Fall so your mileage may vary if it is a hotter month.

I always buy my summer sausage un-refrigerated. The one on the shelf. We buy the smaller ones, and eat what we open. These are usually the late trip lunch choices.

I've had summer sausage last as long as four days after opening the package. It gets a little oily, but nobody has died.

The important part is only use the summer sausage sold off the shelf, not if it is sold refrigerated. Get smaller ones that will be used in a day when opened. I too have gone 24 hours on an open one, but I shave off and dispose of the open end.

I should have added that our whole salami is an un-refrigerated brand as well. We also like the un-refrigerated beef sticks as an alternative occasionally. Off topic, another good trip option is landjaeger if you can find them. They are a dried pressed beef stick that last for trips nicely.

I have taken summer sausage before and have had no problems for 2-3 days and by then its gone, but I have found salami to work even better. I get a smoked garlic salami that is drier, I assume from the smoking process, that works quite well and have used it 5-6 days and again by then its gone. When I say its drier I mean it doesn't seem to be as fatty or greasy and after a few days it won't be oily in the bag.

We took several cured dried salamis on a ten day trip and they were fine till the end. We have no problem with Eichten's bison summer sausage either, though I've never tried to keep it going more than 4-5 days.

I take usingers or what ever I've been sent for Christmas from sales reps and it always lasts till its gone.

This is what I do also. I will be bringing a few of the smaller ones for the June trip.

The leaner the sausage the better. If you ever dehydrate hamburger, its best to use the leanest or even grind from a very lean roast. Its the fat that spoils in the meat and will make you sick.
