      What don't they freeze dry?

This year I'm trying freeze dried cheese. So far it's pretty good. They have freezed dry butter, cheese shortning... you name it.

I was looking at their website and my thoughts are, pretty expensive. A pound of cheedar cheese for $34.89? By freeze drying something it does'nt decrease the weight much does it? FRED

Yes the weight is much less. Too bad it doesn't say how many pounds of cheese a pound of freeze dried makes but a tablespoon of dried cheese is mixed with two of water so at least three times.

It does say. 1 can = 10 lbs shredded cheese.

You're right and I'm right. I think you probably looked at the cheddar - 2.5 pound can makes approximately 10 pounds of cheese.

Mozzarella - 1.75 makes about 7 pounds

Monterrey jack - 1.75 - doesn't say (and the one I happened to look at)

Colby - 2 1/4 pound can - says about 4:1 0 so maybe 9 pounds?

And I don't know if the weights which appear to be shipping weights - include the can weight or not - but in the $4/pound range - maybe. If I make quesadillas two nights - how much weight do I save though? maybe 2-3 ounces per person per meal? (much less if you use their serving size) As I said - at least three times - and looks like four.

If backpacking though.....

Ya got me interested in the can of turkey! Freeze dried (poultry), is much better than air dried in my book. Been using air dried, cheese powder, sour cream, buttermilk for a long time, but the freeze dried shredded cheese looks interesting!

this is from mountain houses website, pertaining to their 10 lb cans...

"After opening, we recommend using the contents within 1 to 2 weeks for best results and taste."

thats the stopper for me as far as buying bulk freeze-dried foods.

If I try the many serving cans, I'll vac-seal into usage sized packages upon first opening. I have had good results that way with the multi meal packs from Mountain House.

We use freeze dried cheese on nearly every trip and just bought a "can" of freeze dried mozzarella for pizza for our August trip. Although it's a little pricey, the can rehydrates to 7# of cheese, which is quite a bit. Mainly it's a completely no hassle way (no worry about keeping it cool, etc.) way to amp up meals.
