      Hudson Bay Bread... who takes it along?

Do you make a batch of Hudson Bay Bread to take on your canoe trips? We take some every year and the guys love it. Great energy source, and it's tasty by itself or with peanut butter and jelly on it.

We take it on every trip...fun to try new variations.

We prefer Nutella on it instead of PB+J.

I made a batch and took it on the trip this year. It was a hit and went quickly. Tasted great and a much needed calorie boost.

Ok I'm going to come out of the closet and admit to the world that I bring fruit cake on trips. Great energy source. Drop it in a pan and toast in the morning and you're good for the day.

I always take it along. I first tried it on a scout trip in 1970 and fell in love with it. I have never had a complaint taking it on a trip other than maybe running out too soon. Just returned from an 8-day trip and it was a hit again this year. It is also so easy to make and transport.

Fruitcake.... I must admit I am partial to it. Made a batch of fruitcake cookies that wilderness mama had posted on another website. I must confess she was way over the acceptable limits of fruit in it. My next batch will have half as much and more flour.
I did pick up some quick oats today....gonna make a batch of HB bread... kindof thinking of adding craisons or chopped dates in the mix.

I make it in big batches and store the Hudson Bay Bread in the freezer until I need it. I have taken it on 2 week trips with no problem.

I've been wanting to make this since I read about it on this site. I made it yesterday to take to my son who is at Camp Atterbury in Indiana.

It is very good but kind of a pain to make. The "dough" is difficult to work with.

I wasn't sure which recipe, of those on his site, to use, so I kind of changed it up a bit. One recipe called for brown sugar, one for regular sugar so I used one cup of each. Also, omitted the maple flavor and used vanilla instead. Like one of the member from the thread several years ago, added cinnamon and M&M's. They were nice additions.

I lined the pans with parchment paper so I could pop the whole thing out and then used a pizza cutter to slice nice smooth edged, even pieces.

I am also really surprised how many people involved in Boy Scouts in my area are not familiar with this, since I believe the recipe's origin is in scouting.

I can't wait to try it for hiking and paddling.

After my batches cool, I cut them and put them in zip lock sandwich bags. They store well there and are perfect after a week or more.

I cut it into portion sized and wrap them in saran wrap. I also save half gallon milk cartons. I cut the carton in half and put the portions in the carton before it all goes in the food barrel to protect the pieces from being banged around.

drop the candied fruit and add your favorite dried non nuclear colored stuff.
Also nuts are a great addition
I love the idea of doing the "cookie" part
Also instead of apple sauce, I used pear sauce we made from a load of dropped pears we gathered from a old tree one year

I was looking at a bag of that stuff at Fleet Farm tonight and was wondering the same thing.
or just skip the fruit and do craisons or raisons.
Also thinking of adding a bit more flour to the recipe next time.
more experiments for the laboratory..............

Hudson Bay bread! That brings back aluminum canoe memories out of Somers Canoe base. Man I'm getting old.

Always gotta play with your food.......

A friend once played with a "health bar" mixture and added to much milk. He just added more and created a "new" pancake. It was a hit to grab the left over ones for munching on while away from camp

Fruit Cake Cookies revisted....

Decided to make a another batch today.
This is the link to the original recipe

Fruitcake Recipe
Note: misspelling for cloves/nutmeg...should be tspn

My first batch seemed to have too much fruit and on the tacky side.
This batch I added an additional 3/4 cup flour.
used only 1/2# of candied fruit
I didn't have any chopped dates so I used craisons instead
also no white wine but did have blackberry flavored wine.
Hey...they turned out pretty decent.
might even give some away to some unsuspecting person.

Made a batch of Hudson Bay bread this summer....as I was well along I discovered I didn't have enough of the quick oats so it ended up being the original oats. I have two alum baking pans 9x13x2 1/2". So when I put the recipe in one pan I put it on the floor (yes, the floor), put the second pan on top the first and stood on it ( yes, stood on it). I baked it in the oven, put it again on the floor on a towel to protect the floor, and then pressed the recipe down again with the second pan and standing on it.
Made a great bar, I wrapped then individually with saran wrap after I cut them up.
I think they are as good or better than the various granola bars we take on trips.
finding a way to really press down the recipe to make a firm bar is a good thing...and old fashion oats seemed to work as well as quick oats

Made a batch of Hudson Bay Bread last weekend to take backpacking with the Scouts next weekend. I was able to get 30 2"x3" pieces from the pan, plus a couple slender sample pieces. I suspect I'll end up making a batch for the BWCA in August.
