I've never been, but have always been interested in the area from the many posts, and Bear Paulson's trips there.
This is a great idea, and will be on my short list for winter 2019!
We did the winter camping last year (or rather - this year) and after two tries both in a warm, and cold tent, I decided I prefer the cabin life in the winter, yet LOVE everything about the BWCA in the winter at the same time. Best of both worlds.

Believe Silver Rapids Lodge still has a few cabins that are open all year in addition to their motel units. I think they have one or two trails very nearby as well. I stayed in their motel 2005 and snowshoe'd up into the BWCA through the Farm Lake EP.

I haven't stayed, but visited Bearskin Lodge one winter while delivering canoes. Beautiful, warm, clean, and inviting are my first impressions. Great people as in most of your better accomadations.
In Ely, I would probably stay at Voyager North in a bunk house. Your right in town and can experience the fine dining there, get the scoop on where to fish from TGO, a little shopping maybe, and so many good options to do from there.

As far as ski trails the Gunflint has some of the best anywhere and Ely has some also. I would think Bearhead state park must groom. Also love the Pines on the North Burntside arm.

My dad, brother, and I are looking to take a trip to the BWCA this winter. Rather than brave the cold in tents, I'd like to find a resort or outfitter that we could rent a cabin from and then snowshoe or cross country ski during the day. We would also be interested in trying our hand at a little north country ice fishing. Any suggestions on outfitters/resorts that offer something like that?

There are some yurts for rent up the Gunflint in the winter. Also numerous other spots.

That is one of my favorite areas to go off track.
