I too miss you, Ripple. I'm not liking your new job if it keeps you away from us.

Awwww feeling the love guys! Sorry 2 full time jobs= craziness.

I have never tried egg dishes for the dehydrator- we always bring fresh eggs.

I will try to participate more!

Im looking at a couple books (High Trail Cookery and Backpack Gourmet, both by Linda Frederick Yaffe) and she has many Ripple-style dishes where you cook it up and then dehydrate it. Quite a few have eggs in them. Has anyone here made any of these? How did they turn out?

Nola: eggs in a dish like quiche or eggs in a dish like meatballs or eggs used as a binder in something like stuffing?

I can't imagine dehydrating and re-hydrating something like quiche or egg casserole would go well (but I could easily be wrong), but I've done stuffing before with eggs in it and that worked really well.

Good luck!!

Thanks Chicagored, "i.e. croutons. (I cheat and use the dehydrator) Then soak them in an egg mixture for awhile like you are going to make french toast. Cook it like scrambled eggs."

Excellent breakfast idea for my grandsons, Thing1 (6 years old) & Thing2 (1 year old and an eating machine)!

Nojo - Here's a suggestion: Cut up some bread into 1 inch squares and let it go stale, i.e. croutons. (I cheat and use the dehydrator) Then soak them in an egg mixture for awhile like you are going to make french toast. Cook it like scrambled eggs. Dehydrate.

At camp, rehydrate and heat by frying in a pan. Serve with cinnamon sugar or syrup.

Just a suggestion for something simple the kids might like.
