I bought some smoked black pepper wild salmon jerky at the Patagonia store in St Paul (Highland Park). Just had it for an afternoon snack. I just thought I would pass on that it was pretty darn good. Not salty at all. I enjoyed it. Comes in a 2 oz pack in a vacum pak bag. Might make for a good tripping snack. It was a little pricey at $12.50 though but was very tasty. Oh, and it's susposed to be "sustainable".

I wonder if a guy could make it by just leaving it in the smoker till it turned into jerky? Or was it ground up and pooped out of a jerky cannon?

It was not ground up. Bite size chunks. It was a cross between beef jerky and smoked salmon.

Sorry for all the questions, but was it sliced thin, or more like it was from the ribs/belly? I smoke a fair amount of salmon and would definitely like to try to make some!!
