As the subject suggest, I'm curious about cheese. What kind(s) do you bring and how long does it keep? What kind do you specifically NOT bring? I'm looking at some things that will require cheese and I want to make sure I bring the stuff that will last.

We bring cheese every year...usually an irish cheddar or some sort of hard cheese. It usually keeps well esp. if vacuum sealed.

If you're going in warm weather, hard cheeses like blocks of romano or parmesan or very sharp cheddar travel well. In cooler temps, your favorite cheese will work. It might get a little soft,but for a few days you'll be ok.

Good info in that thread you found. We take individually wrapped string cheese, harder aged cheddar, and Baby Bels with us.
Sometimes bring shredded cheese for a first or second night meal. The string cheese can be used on pizzas as well. A small soft sided cooler is what we use if the weather is warmer but we normally trip in colder months and don't need the cooler.
I like the Baby Bel but the kids didn't go for them like I though they would. They just liked playing with the wax in the fire.
