Nice recipe, I bet those would be a hit at home or on the trail. You should post it under side dishes.

The House Autry bag says 20. That is teaspoon sized hush puppies. We formed them into pancakes, and I think we got 4~6 3~4 pancakes. They filled a 10" fry pan.

Good with fried fish and coleslaw.

Corn Fritters
Ingredients:
1 cup Hushpuppy Mix with Onion, House Autry
2/3 cups Corn, Harmony House
1/4 cup Crumbled Bacon, Crumbled (Hormel)
Ghee, Purity Farms

Directions:
Rehydrate corn; add 2/3 cups corn with 1 1/3 cups water. Simmer for about 10~15 minutes, or soak for 1~2 hours in cozy. Drain corn and retain 1/2 cup water for hushpuppy mix.

In a bowl, thoroughly combine hushpuppy mix and 1/2 cup water from corn. Let stand for 5 minutes.

Add corn and bacon to hushpuppy mix and combine thoroughly.
Using a teaspoon, drop batter into ghee and fry for 3 minutes or until golden brown.

Remove from fryer and drain on a paper towel.
