We made up a new recipe last year that worked really well. It cooks in the coals in foil, without a reflector oven. Sorry, but the reflector oven is slow to set up and a pain to clean due to it getting so sooty.

Pita Pizza
Use the thick, doughy pita shells
Fold one in half
squirt in pizza sauce from the plastic squeeze bottle
add bacon crumbles (real bacon)
add pepperoni slices
peel off strings of pre-wrapped individual mozzarella string cheese and put in pita
add pieces of pre-wrapped individual cheddar snack sticks (for first 3 days of trip)
season to taste
wrap the folded, stuffed pita in aluminum foil, making sure there are no holes and that it is rolled up tight on the edges
place in the coals, and keep flipping every 2-3 minutes. Don't let it discolor on the outside, as it can burn inside without showing it on the outside
Remove from coals with tongs or a couple of sticks. Open and enjoy.
Burn as much of the foil as possible, and pack out what's left in the morning.

Nice and easy. Thanks.

I will, however, disagree to a point with your assessment of reflector ovens. The one I built is quick to set up and leave together for the duration of our base camp and we have never felt the need to clean it. It's the angles, not the mirror quality of the surfaces, which does the baking magic.

The main reason I hesitate to bring it: One More Thing. It's a bit on the heavy side due to the free pieces provided to me being a thicker gauge than necessary.

I have a couple of reflector ovens and use them quite a bit and rarely have to clean any soot off of them. They don't have to be super shiny to work. As for setting them up all of mine take less than a minute to put together.

Points taken on the reflector oven gents. It's not that I'm against reflector ovens. We've had very good luck making pizza, biscuits, apple cobbler, etc. The one from Old Scout is very light. It's just another piece of equipment to bring, not heavy. But I do stand by my comment about it getting sooty, which is never fun to clean, at least for me. Try to pizzas though -- it has become a staple of ours, by unanimous vote from some hungry dudes.
