by request of daughter number 1 - Creole Sausage

1 1/2 lbs. ground pork
1/2 large onion, chopped fine
1/2 garlic crushed (note: NOT 1/2 clove, 1/2 of a whole head/bulb)
1/2 tsp each salt and pepper
1/4 tsp ground chili pepper
1/4 tsp cayenne
1/4 tsp dried thyme
1/4 tsp allspice
1 bay leaf, crumbled
1 TBSP chopped parsley

Mix all ingredients, form into log, store in refrigerator. Best if sits a couple of days for flavors to meld. Cut into patties and fry.

Dang! That sounds good; especially all the garlic! Sad thing is, I would be the only one who ate it.
