My non-cooking cousin has been grilling walleye fillets on a grill for many years and is loving the result. I am thinking it is a poor use of nice fish.

He marinated the filets with the skins on and places them on a hot grill. The fish and skins tend to stick to the grill and the fillets fall apart as he turns them over. The result in a mess of meat with burnt edges and not much in terms of flavor.

We are going on a Northern Canada trip and I will be doing the cooking. He is hoping grilled walleye is on the menu...

So does anyone have a nice grilled walleye recipe to share?? I would really appreciate any helpful hints or should I avoid grilled walleye altogether?

If you want to grill Walleye get a roll of non-stick aluminum foil. Shape a tray out of the foil, roll up the edges to form a tiny pan just big enough for your fillets. Set the foil and fillets right on the firegrate and cook. Nothing sticks to this stuff. Just make sure you cook of the side of the foil that says cook side. You will get the smoky flavor he likes and no mess or broken fillets.

Another way you can cook them on the firegrate is to remove the skin on the fillets. Put them into a fish basket made for cooking fish. They are a flat mesh basket sometimes with a handle for turning. The fillets stay together nicely. You will need to spray the grate with Pam cooking spray before cooking.

For me I like to cook them in a spoonful or two of butter flavored Crisco.

I cook filets with no skin in a foil tent. I season and drizzle on olive oil to both sides. Roll the edges on the tent and put on the grill. Turn after 4 minutes. You can put right on the coals this way too.

I like this way because theres no mess. I like to put the used foil in a small ziplock first before putting in the main garbage ziplock.

Your post reminded me of this series of videos. These Canadians just kind of casually catch a lot of walleye (which they like to call pickerel) and pan fry them over a campfire. They don't dwell on it much but it caught my attention.

They had one where they added some seasoning but I can't find that exact one right now. Their basic method appears to be pan frying in a small amount of oil.

I like to cook fish in ghee or peanut oil.

Also their videography is good and I like their videos. :-)
