Do any of you guys dehydrate peas and corn or green beans for your trip and if so how good is it?

Yes. I use have used frozen veggies a few times with good results. Typically they get mixed into something else, not eaten alone. They do take some time to rehydrate--I've found it best to put them to soak some hours before using them.

Yes. I dehydrate from fresh. I find they re-hydrate better when cooked, rather than just blanched as most suggest.

They do great. Rehydrating everything seems to go better with a rolling boil

Dehydrated corn is one of my favorite hiking snacks. I just eat it as is, out of the bag. Delicious. I've never dehydrated it myself, though.

I will take frozen mixed corn or frozen mixed veggies and dehydrate to take on trips. Works well especially if you're looking for a hot side or something to add into soup to make it heartier. They definitely take a while to rehydrate, especially the thicker pieces.

I tried vegetables. I simply prefer the flavor, color, textures, and fast rehydration of freeze dried. Also seem less weight per serving. YMMV

When people mention using frozen veggies, I wanted to add that you can put the frozen veggies on the dehydrating trays without defrosting them. Super easy & each tray can have something different so you can run a whole machine full & get a lot of meals out of 1 run.
