Fried up some walleye wings-cheeks and the last two small filets from last winter.
Sometimes we get some big 'eyes that gut swallow and big 'eyes taste great, at least out of Lake Waconia. ;)

I have left them for the eagles on many trips. Never again will I leave these on a fish.

i will add this , an electric filet knife does help in getting a better cut.

i prefer the wings , sometimes the cheeks can be a bit chewy , BUT this last batch of cheeks was not and very good.

One aspect I'm unclear of with the wings is the skin. Do you cut it off before frying, or leave it on and eat it?

leave the skin on , just try to get as much of the silver membrane off the meat side , batter-fry-eat :)

I use the cheeks for soups and the wings for appetizers.

Back in my day all the walleyes had a 6 foot wingspan. We built gliders out of them and and would jump off big Red Pines and glide all the way back to Ely and get a drink.

Footrace up the Echo Trail. It fit in nicely with our Olympic training and spy work. I broke the 4 minute mark in the mile many, many times in the 70's after a full fifth of whiskey, but it was a state secret. We never slept back then, so we'd roll back into camp just in time for the pre-dawn walleye bite and get our limit of 10 pounders using cigarette filters soaked in sardine oil for bait. I smoked 2 packs a day back then but it didn't affect me; I'd break off the filter for later use and then smoke 'em down in one long drag. The mosquitoes wouldn't touch me. But I digress.

Sorry, Shock. To your original point, yes, the wings are delicious. I fry them up first and then eat them while I'm frying the rest of the fish. Cook's privilege. :)

that was well before the emasculated system we have now. Our permits were our iron wills.
