I'm looking at some recipes for the trip I'm hoping won't get cancelled and had a question about packaging dehydrated meals. Fried rice, for example. Instant rice with dehydrated veggies and OvaEasy eggs, just add soy and oil.
For this, do I rehydrate the eggs separately then mix into the meal, or can I just add hot water to all the dry ingredients at the same time? I'm just not sure how the eggs react when they reconstitute.

This is how I see it:
Especially for fried rice, mix the eggs separately and cook them, then add to the rice. In that way you have eggs as part of the dish, not a dish made of rice and eggs, if that makes any sense. Think of it the opposite of making a cake: eggs go in the mix to make the cake, not added afterward. Fried rice is rice with veggies and pieces of egg added.
I hope this made sense.

Yes the ova easy eggs will reconstitute into raw eggs. I usually take along a very small whisk, but a fork will work also. For your recipe, I would cook the eggs, then add to the rice.
And yes, ova easy can be used in other recipes like pancakes just like regular eggs.

Probably the best stand alone powdered eggs I have used. They work well as plain scrambled eggs but have a slight sweet taste, adding extra ingredients make a very good scramble or omelette!
Also work very well as ingredients in sauces, batters or dough. I just mix the dried egg powder into the mix adding water as needed for the recipe.
They make great potato pancakes to go with battered fish!

I have used OvaEasy eggs for a long time and along the way I've tried others that were less expensive but I've always found them to be a little lacking and gone back to OE. Has anyone tried the Judee whole egg powdered eggs? Again, it's got great reviews and it is almost half the price of OE. I ordered some and I'm going to compare the two but I thought I'd see if I can get some feedback from here too.

Everything they said :) Ova Eggs and Oscar Meyer "precooked" Bacon. Almost like home but made better by the outdoors!

We have a lot more egg meals since we started using these. A couple of foldover sandwiches with eggs bacon cheese and mayo has become a dinner we look forward to. Also corn-kits cornbread using them and Nido powdered milk is much better than water only mix and pancakes as well. We also have them in our hurricane emergency supply.

If you own a dehydrator, you can make your own OvaEasy-style powder. We raise chickens and eat only our own, so my family is very picky about eggs. They're essentially identical to non-dehydrated scrambled eggs once rehydrated.
The only real trick is not spilling the egg when putting it in the dehydrator. We've found that whipping the eggs into a froth before dehydrating helps with this. They also dehydrate faster that way.
