I'm planning a trip with some friends next month, and one of them has Celiac's. Every time I've fried fish I've used pancake mix or a premade mix. I usually don't have to worry about gluten, but does anyone have an easy recipe or method for cooking gluten free fish? Any other non-fish gluten free recipes are also welcome.

I don't fry fish, but I do make really yummy gluten free chicken nuggets. Just use rice flour to dip the filets. You can add whatever seasoning you want to the rice flour first. Coat the filets with the dry rice flour mix (with chicken I first use a little egg coating before dipping in flour but maybe not needed for fish). Then just drop in the oil to fry.

Head over to Trader Joes. They sell Coconut oil in little packets (think soy sauce packets), and pick up some almond flour or coconut flour while you're there.
Alternatively, skip the breading, and just cook the fish either in clarified butter (also at TJs) or Coocnut Oil, lemon juice, Salt & pepper.

We frequently make gluten free fish at home and I've been experimenting over the last few years to find the perfect replacement. I love fish frys, as it was something I grew up on a weekly basis so I've been pretty dang picky with trying to go gluten free for one of my favorite meals. I haven't tried this out in the field, but I can't imagine a reason why this wouldn't work.
1 part chick pea/garbanzo flour (these are all the same thing)
1/2-3/4 part arrowroot flour or corn starch
Mix together, add salt and pepper. At home, I season the fish directly rather than the flour, but camping it's probably easier to just mix it in. Sometimes I add curry powder since this flour mixture is essentially Indian inspired and it turns out really great for less flavorful fish (e.g. cod).
You can then use this as a beer batter (just add gluten free beer/water) until it looks right. Or just dip the fillets to coat and fry. At home, when I have time, I dip, egg wash, and dip. This yields the best results in my opinion, but that's a lot of screwing around in the field.

I have a fondness for potato pancakes, and take Panni Potato Pancake mix often. It works very well as a dry fish fry coating for pan fried fish. I like to add freeze dried green onions to the dry mix and dredge filets in the dry mix. Then fry em up!
