Toughest meal of the day for me is lunches. Wraps, summer sausage and cheese can only be done a couple days for me. I’m going to give cold soaking a try. A lot of backpackers do it for weeks on end so I thought I’d give it a try on vacation in the bwca. Basically instead of cooking your dehydrated food you put it in a container, cover it with cold water and sea it up. 1-2 hours later it’s ready to eat.
Does anyone do this and what are your favorite ones to make?

I have not experimented with cold soaking much. I have tried Food for the Sole cold soak Triple Peanut Slaw and it was tasty. I have not tried designing my own cold soak items yet, other than breakfast smoothies (which I love for quick morning starts on solo trips).
I did use instant powdered hummus for some lunches this year. I brought along some fresh carrots to dip in it. It was really tasty.

Easiest, simplest meal of the day for me is lunch - just the opposite of you. Several years ago I simplified to a ProBar Meal bar and nuts for snacking. I usually don't even stop, just eat it walking back on a portage after the first load, snack on the nuts before/after.
I've eaten the Food for the Sole no-cook meals, but for dinner. Usually have cold cereal for breakfast, so wouldn't want to do it for lunch. I could see a salad like Tabbouleh or some kind of grain-based salad for what you are talking about.

Yeah couscous and qinua and rice are on the list to try. I’m also going to try chil concarni as well.

I've eaten some dinners from Outdoor Herbivore that have some no-cook versions. I liked the Blackened Quinoa one. Theirs might give you some ideas. I'd think couscous would probably be easiest to rehydrate by cold soak, but don't really know.
