Like the title says. Has anyone tried freeze dried broccoli, or other vegetables? Are they good enough to rehydrate and eat alone, or is it best to use them as an ingredient? I’m just looking to have something for dinner besides a protein and starch/carb after day 3.

I typically use FD vegetables as an ingredient in a meal mostly because I prefer to cook one pot meals. However, I have snacked on FD vegetables without hydrating them, especially corn and peas. I have had good luck with freeze dried broccoli from Nuts.com
Their broccoli is in nice sized chunks and has good flavor.

The stuff I used looked fragile and the buds had fallen off the stems quite a bit but it worked well in the sauce I made. It was alfredo noodles so the buds mixed in worked pretty well. So by themselves, I'd probably go for something less fragile, but as an ingredient they work great.

We had freeze dried broccoli, green beans and celery from North Bay Trading co. Also FD chicken. The broccoli was mostly small but whole pieces and rehydrated easily. We barely covered with boiling water and let it sit about 10 mins while we got other stuff ready. Boiled at the end for a few minutes with a sprinkle of chicken buillion,butter and black pepper. It was acceptable for a dried product. We were heating up some cheese soup at home and the bag was sitting on the counter. Added a handful and simmered for a few minutes. It was really pretty good mixed in the soup.
