I am taking a Hero 10 Black on our trip this year. I have zero experience with it.
(1) What is the most simple and effective mounting hardware?
(2) Any operational tips for a newbie?
(3) Any special software needed to organize data on the backend?

I love taking my GoPro along on trips! Editing footage afterwards helps relive the trip over and over and then you get a fun video memory to show friends and family.
(1) I bring 2 mounts: a small clip that i can attach to a hat or backpack strap, and a flexible tripod for around camp or attaching to a gunwale. Examples below:

(2) Tips: play with it before the trip starts! There are many youtube tutorials to help understand what the GoPro can do. I watched the channel "Great Day For A Hike", he also makes videos about editing. I try to keep it simple since I'm not an influencer - Standard video mode, Timelapse, and Night Photography (Stars/Aurora) - are all I've really used. I also bring a compact digital camera for photos.
Bring a battery pack or extra batteries!
(3) I edit my videos with Davinci Resolve. I know GoPro's app Quik can edit videos, but I liked the versatility of Davinci. Again, Youtube tutorials.

I take a lot of GoPro images on my trips as well! Acquiring a GoPro camera about 11-12 years ago is what started me on a fun hobby of shooting and editing a LOT of videos that get posted to my YouTube and Vimeo channels.
For a simple, cheap, versatile and effective clip, I just use a 2" spring clamp onto the plastic snap-in base that the camera came with. I think that base is mostly intended for display at purchase but the base with the clamp works well for me.
These are a couple of photos of this set-up clamped to my kitchen counter.
If the captured video ends up to be not level because of the angle the camera got clamped, I simply correct that in editing.
I use Adobe Premier Elements for the editing. I posted the most recent video from last years's trip in another thread but here is a link as well.

I bring a small tripod as mentioned earlier, and a floating handle mount. The latter allows me to capture a fight with a fish as well as to submerge the camera in the water to show the fish there. The obvious benefit of the floating handle mount is that if you drop the camera it will float with a bright orange handle exposed above the water line.

Good advice so far…
Don’t be afraid to shoot A LOT of footage. My first few trips I was afraid of battery life (bring a charger or extra batteries) and I missed A LOT.
I primarily did my Pheasant hunts, but would turn it off and on a lot now I just fun it all the time.
Canoe trips I just have it on a floaty and run it whenever I see something or for fishing or canoeing I use a head strap. I don’t shoot as much though for canoeing so NOT an expert there.
For editing, I start off editing on the Go Pro Quick app on my iPad. Cut the video to a short or pull my photos from a clip on the app. Then I typically put all my photos and videos into my iPad photos app. That way I can add any photo I took on my iPhone as well. Do any editing of the photos and videos for colors/lighting in the photos app. Then I use iMovie app (because it is free and pretty simple to make a video). Final Cut Pro is better but there is a fee. I’d start with free stuff. You can use magic movie in IMovie…it’s simpler but the videos/photos get cut and if you are picky (as you get better) the cuts aren’t as perfect as I would like.

Even more simple is using the Go pro app to make a movie/video. It’s similar to Magic movie just can do it all in one app. I think youn need the GoPro subscription though? I eventually bit the bullet and did that out of simplicity.
