What do you do with your game? Prepare it yourself? Take it to a meat processor? Give it away?
We cut it up ourselves and make deer sausage, jerky, beer sticks and so on.
Haven't been bird hunting since the kids were born so no fowl in the freezer.

We usually process our big game, unless we have are not in our home area. we'll bring it to a locker and have it kept cold and often times we have them ground up some of it. I like deer mixed with a little pork. I dont have the equipment to make sausage yet, but that is next on my list.
last year we didnt shoot enough waterfowl to do it, but two years ago we had enough for several roasts and smoked duck and goose, but also to have it ground up and made it a sausage!! good stuff!

We cut up all of our own steaks and roasts from our deer. Then we take our scraps in to be ground up and mixed with some beef. We have a meat market we trust, and they don't mix our deer with other peoples deer, which is a must for me. I know my meat has been cared for, is well trimmed, and isn't spoiled in any way and I want to keep it that way. The meet gets stored in a dedicated game freezer in the garage.
Still have a few ducks, pheasants and geese in the freezer too.

We do a combination. Most of the deer we butcher ourselves. We make steaks, roasts, hamburger...
The scraps that can't be used for anything else get put into a bag and taken to the butcher for processing into brats, summer sausage and hot sticks.
Not much left of the deer when we get done with it. The way it should be.

I always have & always will process my big game animals myself... make our own hamburger, jerky & steaks.
Of course I also take care of all the turkey, phesant, grouse & etc. I have taken.
I have never dropped an entire deer off to get processed, but have dropped off meat for sausage.... but only to a processor that gives me my own meat back. I take care of my game from the start, because I plan on eating it & I have seen how some others have "taken" care of their animals.

Does anyone can their game? I am thinking of buying a pressure cooker and canning some venison this year. Any tips or recipes to share? We almost always have rice around so I think it would be handy to be able to take the meat out of the jar and heat it up with some rice.
