I have never dehydrated juice just tomato sauce. I tried to find some info/options for you.
Previous post on a product called Caesar Pleaser (clamato type powder) made in Canada.

You could experiment with making you own out of Tomato powder
or a bulk purchase of V-8 style powder in bulk.

I found a pack of dried Bloody Mary mix at Walmart. Here is how it turned out.

I tried drying a bottle of Mrs.T's bloody mix yesterday. Turned out great. It's at the "leather" stage now and reyhraded just fine. I'm going to see if I can get it to a powder. It's been about 14 hrs so far.. Looks like dried liter of mix would rehydrate in a 32oz nalgene. Put bloody Mary's on the breakfast menu this year:)

I tried Claussen chips. They don't rehydrate too well and dried they are incredibly salty, but not too bad. Spears might be different. I also did baby dills. They shrink up to nothing and again are crazy salty, haven't tried rehydrating them yet.
+1 on the FD devils spit. Real tasty.

If you like a bloody made with Clamato I would go with the
Cesar Pleaser dry packets. Tried them last year and was very happy. They are actually reasonably priced until you add the shipping. But still worth it
