      Need a little help from the foodies

My niece and nephew have to create a dehy camping meal for a project for our local fair. So they came to me only issue is I bring little if any dehy meals in my trips . We're fresh food folks.. Is there a simple meal they could create and dehy in the oven.?? We made jerky yesterday using info from here and it rocked. Any help would be much appreciated. Thanks much Darin

Ripple's Thread on Dehydrating Basics has a bunch of great tips.

She posted her recipes in the Main Dish Sticky Thread. Look for her posts and you will have lots of options for dehydrated dinners.

a walk into a grocey store can fill the pantry with dried stuff. I rarely do potato's anymore for example.

+1 The method of pre soaking in a screw top dish she talks about in the Dehydrator thread works great and her Guiness Beef Stew is super fantastic it rehydrates really well. Other wise use a chili or spagetti recipe you/they prefer and dehydrate it as a one pot meal. My advice on that is that same as the other threads buy leaner hamburger and rinse it with hot water before adding it to the food. Otherwise whatever prep you normally do is proly fine.

I dehyed a handful of meals for the first time earlier this year. Stew, chili and spagetti. Just took it off the stove and let it go over night. Also dehyed baked beans and apples. Very easy and very good. Should have been doing this for years...

I have a tray of chili and a tray of sausage gumbo in the oven dehydrating today. They were both leftovers from meals earlier this week. Just enough left to do 4 servings of each.

In my experience, thicker soups like these seem to work well for oven dehydrating.

this is a great side to go with your jerkey:

2 large sweet potatoes
1 to 1.5 cups Apple Juice
2 to 3 Tbsp Real Maple Syrup
2 to 3 tsp Cinnamon
nutmeg if desired

Peel sweet potatoes, cut into smaller pieces and boil until soft. Drain and mash. Stir in enough apple juice to reach the consistancy of pancake batter. stir in maple syrup, and cinnamon.

Use fruit leather trays or parchment paper in dehydrator. spread thin layers. Dehydrate at 135° for eight to ten hours. After about six hours of drying, peel the sweet potatoes off and flip them over to expose the bottom side to more hot air for the remainder of the drying time.

This should end up being somewhat flexible like a fruit leather. It can be eaten as is with the jerky, or rehydrate for mashed sweet potatoes.

very easy to do and addictive to eat on the trail.

Im going to have to try this recipe my house is crazy for fruit leathers and everyone also really like sweet potatoes
