I've read a few old post about specific things to do, but I haven't caught one yet that excites me. I expect to have blueberries and raspberries. Considering I really can't make a decent pie crust at home... What are some trail recipes? (Not just crust, but filling to... Or is the best just berries, sugar and water?)

I have an outback oven. Considering a reflector oven (thinking I could just use foil and some sticks to make one on the trail). Have the parts for, but have not used a jello mold oven.

Thinking even blueberry filled crepes instead of blueberry pancakes might be cool... Dear Lord! Get me out camping!

I just use one of the box pie crust mixes on the trail. Press it into the bottom and sides of a jello mold. Mix berries, sugar, some cornstarch, no water, and place on crust. don't bother with a top crust!
If berries are not plentiful due to drought or time of year, dried blueberries work great. Just soak them in a little hot water first to plump them up, drain water and proceed.

I've got the Outback Oven cook book, I can look this weekend and see what recipes are in it for berries.

I was wondering about doing a take off rhubarb or apple crisp, but with berries.

Mix berries with some sugar.
With a fork mash together butter(or in this case ghee), flour, and sugar
Place crumbles on top and bake.

What d-ya think?

My grandmother used to make a berry crisp like that. Very good!

Once on a trip I had a collection of the best deserts in the wilds one could ever thing of that a friends wife made.
The first night was a crust made from graham crackers that was formed with a bit of gee. It was pressed into these metal cheap metal camp bowls you see in kits. Then a collection of wild rasberries were cooked down with a bit of honey and corn starch and poured into the cooked crusts to set.
The second night was handmade apple fried hand pies. The lady made the dough from scratch with flour and water on a rock slab. Gawd they were good. She just boiled some water with some spices and added the dried apples and then spooned the mix into a hand flatten dough, sealed the edges and fried the pies in oil.
The last night she made rolls of bannock type dough around branches and filled the center with a mix of dried berries, honey that she mixed with corn starch. Again they were great.

Wow, that's amazing!

One of the reasons I do trips like this is because I learn so much, especially about cooking. Those treats you shared had me first thinking about how incredible they sound, and second how simple they sound.

What you need is to make a crisp with old fashioned oat meal. I looked thru my Outback Oven recipe book it has some recipes that you could convert to using berries in it rather than apples or whatever other fruit they have listed in them. PM me and I'll scan the recipes from the book and email them to you.

I've never looked at dried apples in the same light again after that trip. I mostly "stew" them with some brown sugar and pour the mix over a chunk of bannock. Its messy but dang if its not pretty good eating on about day 5.

We made a peach cobbler with Karen's freeze dried peaches. Added water brown sugar and cornstarch. Used the topping from the jello mold oven thread. I liked the peaches more than a lot of fresh ones. They have freeze dried berries too. Since we went in June we didn't find any fresh ones this year.
