What is your favorite cheese for lunchtime cheese and sausage on crackers or flatbreads? A hunk of cheese should last 9-10 days wrapped in cheesecloth at room temp, have a firm texture at room temp and taste good with summer sausage.

I suppose I like a sharp NY cheddar best, but parmesan is nice. We usually carry three. Some have some oil separation but it has never bothered us. Have taken brie, munster, swiss, and colby over the years.

Question, I want to bring cheese for 3rd day Tacos and cracker snacks throughout the trip. Would you keep it in its original package, or remove it and wrap it in cheesecloth? I would think it would be oily after a few days in the heat?

Put it in a small soft sided cooler with an frozen jug of ice. It'll last easily until then.

I like a triple layer of cheesecloth, loose wraps of plastic wrap and a cloth bandana. Some folks use wax paper instead of cheesecloth for the first layer. Hard cheeses will get oily no matter how you wrap them so put it somewhere in your pack where it won't be a mess. I never leave it in the original wrap or use a zip lock bag. A good hunk of hard cheese will last two weeks easy in BWCA temps.

I use zip locks and don't worry about the oil. We eat it often enough and fast enough that it's never a problem. Near end of a trip I've discovered I can mix up a pizza dough for the JMO, throw in leftover cheese and and maybe some other items, and it's a really tasty meal - kind of cross between a calzone and a grilled cheese sandwich.

Medium cheddar does well without refrigeration and will last all week. In the unlikely event of mold appearing, simply cut it off. Everything else will be fine. We've never brought Swiss cheese, but I think that would be fine, too. You won't need a cooler or ice.

Avoid Colby cheese unless you're planning to eat it in the first day or two. It gets real soft and oily.

My wife and I have brought mozzarella cheese sticks with us a lot on canoe and backpacking trips and had good results with them lasting quite awhile.
