      Dehydrating Blueberries

Blueberries are not going to be in season yet when we go but I love blueberry pancakes for breakfast.

Has anyone had any luck dehydrating/re-hydrating blueberries for pancakes?

I tried them once and had no luck with them. According to dehydrating books and websites you need to pierce each of them. I pierced them several times and they still would not dehydrate. Not sure what the trick is.

too easy to buy good dehydrated blueberries and they are a pain to deal with.

Shoot, this is not what I was hoping to hear. I thought the skin might be a problem. I wonder if you could just cut them in half. I might pick up some from the store and give this a shot. Thanks so much.

freeze them first and then put them in the dehydrater. just did some yesterday and they dried nicely

I read in the Ball Blue book for preserving foods that blueberries have a very waxy skin and thats what makes them hard to dehy. The Ball book recommends blanching them in scalding water for short time then dehydrating. I did a batch a while back. They turned out OK. Took quite a while to dry down. And that was in the dead of winter with the humidity very low.
