Anybody have any luck making Alfredo Sauce at camp using powdered milk + clarified butter + grated parmesan ? I like the idea of making it from scratch (more or less) using shelf-stable ingredients.

Kids love alfredo; and I would like to treat my scouts this summer.

I use NIDO whole milk to make Alfredo or other white sauces.

It works alright not gourmet but people seem to like it.

I regularly use a NOLS pantry method for cooking supplies and the dairy selection includes powdered milk (and or buttermilk), sour cream, cheese. I can make a variety of dairy based sauces including a tasty Alfredo. Also have had good results with Knorr packaged mixes and powdered milk.

I use Nido for milk needs but I prefer McCormick Creamy Garlic Alfredo Sauce Mix. Can't ever have enough garlic in my book.

Reminded me of a mistake I made at Road America, grabbed a bag of Bisquick® Complete Mix Cheese Garlic Biscuits mistaking it for Buttermilk and made some very interesting flavored pancakes. Not as bad as they sound!

The only time I have ever had toooooo much garlic I was at the airport in Atlanta and I got a pretzel and wanted some garlic on it. They dipped the pretzel in butter followed by dunking it in garlic powder. I had to sit by a work partner all the way back to the cities. Once we got in the flight to Mason City, IA was cancelled because of fog. We had to get a rental car and drive the two hours south. He finally told me to just keep my mouth shut and drive. Guess it was a little much.

This is going to sound bad...but I have to ask...i mean your handle "is" butthead... you dont suppose that was his tactful way of saying .... look its been a long trip, and i'm tired... i'd really like you to just give it a rest for the next few miles...

Sorry dude i couldn't resist some ribbing. SERIOUSLY, I really do appreciate your sage input on this and many other threads of this site.

Ps: your coworker was being a jerk.

TC, thanks for the compliments. And I get that a lot, (questions on my moniker, that is)! I have a dry, self deprecating sense of humor.

I love Alfredo sauce as much as the kids! Like scratch style cooking, home, and at camp. Use powdered milk as a staple camp cooking ingredient, just cannot stand it as a drink! Yuuccckkkk!!!!!

SERIOUSLY, is a term I frequently avoid-----------------

Bring some flour to combine with the butter you're bringing and you can make a luxurious sauce out of just about anything...

Gotta love roux.
