and surprisingly good!

Chicken with almonds:

6 Tbsp. sweet butter
1 Tbsp. olive oil
4 chicken breasts
1 cup slivered almonds

Brown chicken both sides (skin side first) in butter and oil. Transfer to roasting pan and brush with drippings. Roast at 375 for 45 minutes. Fry almonds in reserved butter and oil, drain on paper towels and top chicken with them.
