I am doing a base camp this trip so I decided I can carry some extra luxuries in the food bag since I will not be moving every day. I want to make a pasta dish, but the sauce I like is in a glass jar. It says refrigerate once opened, but I am thinking I should be fine if I immediately transfer it from the glass jar to a vacuum sealed bag. I suppose I could also then freeze, but it would be thawed I imagine by night 2 when we would be eating the pasta.

Any thoughts or solutions?

The sauce should be fine for a couple of days. The acid from the tomato acts as a preservative ( correct me if I am wrong). You could also make your own sauce with fresh vegetables, having it simmer over a warm fire makes the campsite smell wonderful.

You could dehydrate it, but I think that your plan is fine.

It may be worth doing a little exploration in the grocery stores. There are some brands of sauce that are now packaged in plastic jars.

I plan on making mini trail pizzas and my plan is to take store bought pizza sauce and vacuum seal it as well. I'm guessing it should be ok.

+1 it rehydrates beautifully and quickly.

They have it at the grocery stores in plastic squeeze bottles or in a 3 pack of plastic packets.

Seek out the boboli sauce pouches in the 3 pack. Each pouch is good for 2-3 pizzas depending on how much sauce you want.

+2 I like dehydrated marinara sauce. Easy to carry, light and no dishes to wash.

Most jarred sauce/marinara has preservatives. Your idea is fine, If I had a similar camping plan, I might do the same. I have an old vacuum sealer without all the fancy features, so I tend to freeze the sauce into a stackable shape before vacuum sealing.
