Admittedly feeling ashamed. How have I gone 45 years without having this? Tried it out tonight to see if it was something to bring on a trip. Amazing. I did use buttermilk to dredge to the fish prior to breading which we won't be doing in BWCA.

Try the cajun shorelunch. Its our favorite.

The Wabakimi Project uses a 1/2 flour and 1/2 cornmeal mix. Fillets are breaded in the mix, fried in margarine and seasoned with lemon flavored seasoning salt. The results are very tasty.

Tasty but overpriced ...I make my own and I like some zing to it.

Mentioned this before but potato pancake mix while unorthodox works very well!
I just dust fillets in powder and fry. Of course potato pancakes also make a fine side dish!

We have settled on Andes cajun mix. Pretty inexpensive; that's probably how we found it. Rinse fillets, then paper towel completely dry, then dredge; saves on mix and fingers aren't so gummy.

Shore Lunch can be hard to find in my area, we use zatarains fish fry and throw in some spices. In a pinch I'll roll fish around in bisquick complete garlic & cheddar mix.

I use any old cheap non fish, egg, or beer fish breading and then sprinkle the fish with spice such as a cajun fish spice or old oay seasoning.

Old Bay goes on all of my fish at home and in the Q. Nothing better!
