Instead of 2 cups of water to 1 cup of quinoa, just use 1.25 cups water to 1 cup of quinoa. Simmer at very low heat and turn off at end and allow to steam dry. You'll end up with really nice fluffy quinoa instead of mushy, which works very well, especially if you want to make a salad with it. It's like the difference between al dente pasta and very over cooked pasta.
