Any of you ever make Shrimp Scampi ?

We hadn't made it for quite some time, even though it's simple, quick, and easy to make.

Basically just sauté some shrimp in olive oil, butter, and garlic and serve over pasta. Add a little chopped parsley to it if wanted and a pinch of lemon zest.

We also ate some over spaghetti squash as well as spiralized zucchini. Added some diced tomatoes one night with good results. Could also be eaten over rice.

Sounds wonderful! Going to grill shrimp tonight and serve over rice.

Grilled shrimp, pineapple, and green pepper . . . ? grilled (or roasted) pineapple is actually very good, so is pineapple salsa.

And that reminds me that next up is avocado/pineapple gazpacho!

I love Scampi, doesn't get much easier or quicker than sauteed shrimp, it's nice to have a pound of shrimp stashed in the freezer for a backup dinner. I like to add about 1/2 cup of white wine. You know, that old line - I like to cook with wine, sometimes I even put it in the food.
