Any good tacos recipes out there? I have used a powdered mix from Old El Paso for many years (the hot one), but, I'm getting kind of tired of it. Love chorizo. Please tell me what you like. I'm open to about anything beef or pork oriented. Not fish though.

A lady at work uses just chorizo, but one of our local "ethnic" stores has about 6 different no-name brands, so I'm a bit reticent about trying them. Non-chorizo is fine too. I'm game for chorizo tortas too. Used to eat them for lunch in the 1980's once in awhile at a hole in the wall place in the burbs of Chicago.

Here is a beef and bean burrito mix that is really easy to make and dehydrate.

1 lb ground beef
1/4 C tomato puree
1 16 oz can of beans of choice (I use pinto)
1 small chopped onion
1 clove chopped garlic
1 tsp salt
3/4 tsp chili powder
1/2 tsp coriander
3/4 tsp cumin
1/4 tsp cayenne pepper
1/4 tsp black pepper

Brown the beef and drain fat. Combine all other ingredients and add to the beef and cook for about 10 minutes. Simple and really good!

I think you'll like it. I just made up a 3 pound batch that I am dehydrating for a trip this Friday. Obviously, you can also add all kids of extras to really spice it up, but I love the combo of coriander and cumin.

I've just been using the Old El Paso mix also, but have been thinking about something I could mix up myself, so may give frenchy19's chili powder, coriander, cumin, cayenne, salt, pepper blend a try, although my wife may not be crazy about the coriander.

We usually do taco salad instead of tacos.

We usually brown a little beef, add some beans and the seasoning, simmer until warm and thickened. Put that over a plate of lettuce - romaine works well, but any mix of greens is good. Top that with cheese, chopped onion, tomato, and crushed taco chips. Black olives and avocado can be added as toppings, as can sour cream, and jalapenos.

Tomster, let us know how you like Frenchy19's recipe when you try it.

I found the recipe on food.com and used it for the first time on a recent trip. My daughter, Allie, is unbelievably picky when it comes to eating, and she loved it. She has asked for it a coupe times since we got back. Here is the link; there appear to be some more good recipes on the site:

Beef and Bean Burritos

This one's good, to me it tastes pretty much like a classic hamburger taco filling.

1 lb Hamburger
1 tsp Salt
¼ tsp Pepper
1 tsp Oregano
1-1/2 tsp Chili Powder
½ tsp Cumin
1 can Tomato Sauce 15 oz.

Brown the burger, add the other stuff, rinse the tomato can with water (about 1/2 of a can, to a full can of water) let it simmer on low heat until the liquid boils off, (15-20 min) or one of my favorite cooking directions. Simmer until it looks like it's taco meat.

Carne Asada

This one makes good steak tacos, or fajitas

Carne Asada

Flank Steak, Skirt Steak, or Flat Iron Steak
1 Orange juiced
2 Limes juiced
¼ cup Olive Oil
2-3 Slices of jalapeno peppers diced (try a few more,
Should probably equal about a tablespoon) From a jar of Jalapeno Nacho Slices

½ tsp Salt
¼ tsp Pepper
3 Garlic Cloves minced
1 tsp Chili Powder - that's a guide line, I tend to add more
½ tsp Cumin

Mix ingredients in a shallow baking dish. Marinate the steak for 1-8 hours. Usually an hour or 2 is OK to good, though the longer the better. Grill the steak, and either slice up for Fajitas or Tacos or serve as is.

Frenchy - And the verdict is . . . 9 Stars! Wife gave it a 10. I gave it an 8. I think if I had used refried beans (maybe with jalapenos in them) instead of pinto beans, I probably would have given it a 10. Good stuff. Thanks for the recipe. Have fun with the $4.37!

I also put some chopped cilantro on each taco/burrito, along with sour cream, fresh salsa, a couple of my fave hot sauces (Cholula, La Victoria Salsa Brava), and some shredded Mexican 4-cheese. I love zippy Mexican food, and tend to go overboard on the heat. A good meal is when it burns twice, if you know what that means. Avocados are expensive around here this time of year, so I passed on them. They were $1.25 each!

The aftermath - It didn't burn twice, but it definitely caused me to "toot twice". Love those beans.
