Here's one of many Moroccan Chicken recipes. This one is simpler and quicker than most, but is still good, so makes a good introduction to Moroccan flavors.

Ingredients:

1 tsp. cumin
1 tsp. ground coriander
3/4 tsp. salt
1/2 tsp. ground ginger
1/2 tsp. cinnamon
1/2 tsp. black pepper
2 tsp. olive oil
1 garlic clove, minced

Combine and use to coat 4 boneless skinless chicken breasts or thighs. Bake at 375 for 20 minutes. (I used thighs and cooked for 35 minutes)

The chicken was moist, tender, and flavorful. I baked some carrots at the same time and served those and a quinoa pilaf with the chicken.

I bet this would also be a good rub for a whole chicken in the smoker or roaster.

Yes, I think that would work, or grilling. It's very flavorful.
