Decided to do our traditional pork and cabbage meal in the cast iron. Heated it up, seared the tenderloin roast and put it in the oven at 350. I added the cabbage for the last 40 minutes. Everything was covered the entire time.

That is somewhat strange. I have no traditions, but made a similar meal with pork tenderloin and red cabbage and apples. Not in a skillet though. I wanted to use up the last few Honeycrisp apples.

It has it's roots in the German tradition of pork and saurkraut. It's supposed to bring good luck throughout the new year. Many of my friends who grew up in the south have a traditional meal of black eyed peas, greens and corn bread on New Years Day for that same luck we're looking for with the pork and cabbage.

I'm sure there other traditions that are similar, but the idea is kind of the same. Eat poor today and eat rich the rest of the year.

While that meal was more of dutch oven meal than a skillet meal, I did do some skillet baked potatoes to go with the leftovers the next day.

My wife always wants the pork and sauerkraut, which we do in the slow cooker along with hot dogs to have with mustard and sauerkraut for lunch. It's impossible to talk her into something different!

Those look like the kind of potatoes they serve at the Duluth Grill. Yum.

Super easy to make and they taste great. Boil some taters until done. Put them in an oiled hot skillet, mash them your masher, salt & pepper, a little garlic and throw them in a 350 degree oven until the skins start to crisp. Pull them out and put a little butter on them. Boom!
