10 mile days is pretty mellow. Give the newbie a day or 2, then they won't be a newbie.

So first a quick rundown of the route: Moose - Knife - *Amoeber - Hanson - Little Sag - Kawishawi River - Alice - Ensign - Moose. That should work out to be roughly 10 miles of paddling a day for 7 days, plus one rest day for a total of 8 days (7 nights) To me that's a pretty standard maybe even easy, one week trip. The wrench in the plan is that one person in the group of 5 is brand new to the BWCA and has only ever car camped before. Since we can only move as fast as the weakest paddler will allow, does this seem like a doable route for a first timer? I also picked this route because it will be easy to modify on the fly, there are a bunch of shorter loop options built in to this one.
My other question is what should we see along the way? My list so far is: Dorthy's site, Overlook on knife, Eddy falls, Mueller falls, Fishdance pictographs. Anything I'm missing? Anything else you recommend?

You've got some of the good spots already listed. That's a pretty good loop for a first timer, but if everyone else can help carry the load (literally) then it shouldn't be too bad. You're right about many options to shorten it if needed.
I assume you mean Amoeber? If so...Cherry is a cool lake on your route and the 2 sites there are nice. High cliffs and deep water and cool islands. Your route from Little Sag to Alice will be your most remote, whichever way you choose to go.
