For anyone going this route for bacon, who is from (or passing thru) the east side of the twin cities...RJ's in Hudson, WI has just about run out of wall space for all their national and state awards.
Can't say enough good things about them...to include wild game processing.
Will be taking in some of their bacon next month on a WCPP trip...

I learned to take these smoke-cured meats from my dad, 40 years ago:
Bende Hungarian meats
They travel well without refrigeration. I recommend the bacon which comes in a slab and the salami and scout sausages. Good stuff.

5-7 days with smoked bacon.

You can find cured bacon and ham that does not need refrigeration. One October trip, we took a large piece of ham and cut from it all week.

I have frozen it the night before entry and had it day four in May .

How long would regular bacon last without refrigeration? I would probably evaporatively keep it cool(50 degrees). I would freeze it before entry but I'm thinking of having bacon later in the trip. Don't like the precooked stuff for some recipes.

I like to cook high quality bacon before hand and then vacuum seal it while it is still soft. Then I freeze it. It will last a week this way. Much better than that pre-cooked stuff and usually cheaper.

Isn't the process of making bacon cured? The meat place up town is well known for their bacon. Usually buy a slab and they slice it for you. I'll just get a small slab next time and slice off it as needed. I'll not keep it in the sun but I won't refrigerate it either. I'll see how it does.
