So I am taking picky eaters with me and no one is picky about breakfast.

I found some dehydrated hashbrowns at Sam's club and they are awesome! Have you ever noticed how you can never duplicate restaurant hashbrowns at home? These got me close. And they weigh nothing.

Bacon! I bought 3 pounds, partially baked them in the oven, vacuum packed them. They also weigh nothing.

Frybread. I made a simple recipe that fries up nice, I have cinnamon sugar mix or fruit pie filling. I vacuum packed 5 days of frybread and 3 days of fruit filling. Taking the fruit filling in frozen.

Eggs! this one I will regret surely. I am taking 2 dozen eggs in the camping egg containers....and gallon ziplocs. I put the bloom back on the eggs with mineral oil so they can sit for a long time without refrigeration. They are a lot of weight, a lot of space, and a lot of clean up afterwards. I already regret this decision!

But we will have great, late morning breakfasts that will eliminate the need for hearty lunches.

Done the whole eggs and the bottled, careful bottling them, they spoil in a few days. Found I like the dehydrated OvaEasy egg crystals. A bit sweet to me as plain scrambled but very edible. Mixed with other items in a 1 pan scramble very good.
I do the pre-cooked bacon all the time, and the frybread sounds great!

I haven't researched it, but I don't think I would put much faith in re-blooming an egg. There's been a lot of time and contact from when it was washed until you redunk it.
