I have no idea if this is even legal, but this past weekend we caught and cooked some crayfish, took the meat out of them, and put them with cream cheese inside wonton papers and fried them up. All of the frying materials we already bring for our fish fry, so was really not much extra weight and it was absolutely delicious. Major highlight of the trip.
