Can't help you with an actual book but I have found you must use an actual metal pan, if using a pan, not just a thin disposable aluminum foil type. Assume has to do with heat retention and transfer.

Is there such thing as a recipe book for cooking in a reflector oven, such as the Svante Freden Reflector Oven?
