This is a great lunch that’s pretty easy to prepare. We poached a some SMB fillets for a few minutes and then chilled in cool water. After cooling, flake with a fork and mix with mayo and sweet relish packets. Chopped celery would be good if available. Grated Parmesan adds a little salty zing. This makes a great ‘Tuna’ salad for eating on crackers or pita bread.
