Check out Lip Smacking Vegetarian Backpacking from your local library. It has good ideas that you can adapt for vegan sensibilities.

It's almost easier to stick to a vegan diet in the BW because eggs, dairy, meat products don't keep as well as the vegan staples. Veggies last quite well if you can keep them from getting smooshed. We've quite enjoyed veggie fajitas. Just pack in some beans and a few carrots, peppers and some salsa. Of course we add cheese, but still. Cook it all up over the fire and wrap in some tortillas. yum.

I would second the addition of hummus and peanut butter.

Any vegan? What do you eat?

Lots of great stuff. We do eat eggs and cheese but most of our meals are vegan or could easily be made vegan.

Breakfast: pancakes or muffins (recipes would need to be modified)
Lunch: hummus (if we were vegan I would mix it up with peanut butter instead of the cheese we eat on other days)
Dinner: Felafel, black bean chili, Hot and Sour Soup, various veggies including lots of mushrooms and tofu in different spices such as ginger & wasabi, spicy basil sauce, Tom Yum soup sauce, pizza (could do w/o cheese or with soy mozarella), pasta.

This year we are serving dinners with red quinoa instead of rice because the quinoa is much more nutritious than white or quick cooking rices and cooks much faster than wild rice.

Our meal packing sessions center around a table covered with dehydrated and freeze-dried veggies and fruit, tofu, cheeses, and lots of spices. Then we just mix up meals as we feel like it. Only problem is that we have a lot of extra ingredients so we need to go camping more.

The hard part is sometimes finding the ingredients after our best supplier retired. But we're managing to find what we need.

My wife and I are bringing quinoa, fresh vegetables like red peppers, zucchini, and broccoli and making a stir fry using the quinoa instead of rice. It cooks faster and is higher in protein.

We also plan to bring extra quinoa in case the fish are not biting as some of our meals are planned around fish. This way, we'll still get some protein even if they're are no fish to eat.

I also make a home made terryaki sauce using soy sauce, rice vinegar, brown sugar, fresh garlic, fresh ginger, water, and honey. It should not need refrigeration and the quinoa packs small and light.

We eat this all the time at home. We're not vegan, but we try to not eat meat with every meal. It's quick and easy too!
