I just started looking into the freezer bag recipes. We have done pre-made Indian dishes with naan. I can't recall the brand, but they came in easy to open foil bags. Lightweight. I now have some fun homework to do. Looking forward to finding some new foods to try. Thanks all. |

Potato and bean enchiladas...I've never had them. They sound good to try and would easily translate into camp food. We get our Indian spices from a local Indian grocer in the city. They are fairly inexpensive. I think we spent around $3 for garam masala which was 3.5 ounces. Much larger than the regular store spice jars. They had other pre-packaged curries for similar prices. Maybe it will inspire you, and you don't have to mix them yourself, which I prefer not to do either. I like using hashbrowns too. You can mix nearly anything into those. I've also started looking at the vegetarian/vegan meals on www.blog.trailcooking.com. Good looking stuff like Cranberry Almond Tabouli or Cran Mac Carmel Bars. |

Also, google for "freezer bag cooking". You'll get a number of wonderful vegan recipes from both sites. BTW, suggest you purchase the Freezer Bag Cooking cookbook. It's worth it just to support the number of free recipes she posts on the Backpacker site. |

My favorite...PIZZA! I pack some of the Boboli pizza crusts and use the sauce in the packet with sundried tomatoes (soaked in boiling water to bring them back) and basil. Maybe some banana peppers. I bake them in the skillet covered loosely with foil. There's quesadillas and burritos you can do with refried beans, grilled peppers and onions, corn. Whatever you can think of. Hamburger based meals can be good as well. The vegetarian burger is great stuff and you can't really tell the difference. One of my favorite meals that is super simple is a nice vegetable curry. I use a jar of the Patak's curry sauces (any Kroger should have it). I pack in whatever veggies I want in it like peppers, onions, chickpeas, whatever. I will saute` the veggies first to soften them and then add the sauce with water to cover and simmer. Serve with Naan flat bread or pitas on the side and a box of couscous as well. The flavor is unbelievable. This is a good one for day 1 due to weight. |
