You should try sometime to cook the bacon first, and use the fat along with lots of butter to cook the onions! I love bacon fat, it is one of my favorites to cook with. Sounds good though!

I'll let you all in on a sandwich i invented. If its done right, you will not believe your own taste buds. it is that good. I'm not sure how feasible this will be to make in the BW, but here goes. You'll need bread, obviously, ( my favorite bread for this is Health Nut by Brownberry), a block of pepperjack cheese, bacon, mayo, and onion, lots of onion. Toast the bread, at least lightly, to give the sandwich more structure. sautee the onions, lots of butter, lots of onion per sandwich. the key to sauteeing onions is you really have to take your time to make the onions caramelize the right way. cook you bacon, but be sure not to make it too crispy. apply a generous layer of mayo to one of the toasted pieces of bread. next, place two cut slices of the pepperjack cheese on the bread. next, tear a bacon strip into two smaller strips, placing them crosswise on the cheese. another two pieces of pepperjack on the bacon. then another layer of bacon. you can add another of the layers if you want, but two layers of the cheese and two of the bacon works fine. top it off with a heap of caramelized onion. there you have it, it's called "the josh", named after yours truly. if you don't caramelize the onions right, or if you overcook the bacon, then it's not "the josh" anymore. try this sandwich!
