We recently got a Dutch Oven and have been learning how to use it. Tried this easy recipe over Memorial Day weekend and kids loved it so much we're going to add it to our easy dinners for work/school nights at home.

We used ground turkey instead of beef. We made the homemade taco seasoning (you definitely don't need all of it in one batch.)We used canned corn and tomatoes that had spice in them already for extra flavor.

Dutch Oven Taco Soup
From “Best of the Black Pot” by Mark Hansen

12 inch Dutch Oven
18-22 coals below

Ingredients
1 medium onion, sliced
1 lb ground beef
1 (28 oz) can tomatoes, with liquid
1 (8 oz) can tomato sauce
2 (15 oz) cans kidney beans, with liquid
2 (14.5 oz) cans corn, with liquid
1-2 pkgs taco seasoning to taste
Juice of two limes
Tortilla chips
Cheese

Put the Dutch oven on the coals. Saute the onions and then brown the meat.

Add the remaining ingredients, allowing them to simmer. Add water as needed. It should be chunky, not runny.

Let it cook for awhile then serve over tortilla chips with shredded cheese melted on top.

If you don’t have taco seasoning or want to make your own, try this:
1 Tbsp chili powder
¼ tsp garlic powder
¼ tsp crushed red pepper flakes
¼ tsp dried oregano
½ tsp paprika
1 ½ tsp ground cumin
1 tsp sea salt
1 tsp black pepper
Mix it all in a bowl and use to taste. Save rest in empty spice jar.
NOTE – this is definitely more than needed for one batch of taco soup!
