If you "google" celiac disease, you will find several helpful websites. Rice, of course, is gluten-free and the basis of many world cuisines. Quinoa is another good gluten free grain. You can find gluten-free pastas. You can add beans, lentils, vegetables, fruits, seeds, and meat or fish. But be careful of processed meats like sausage and jerky. Even foil-packed meats with flavorings may be suspect. There are some prepackaged dehydrated and freeze-dried meals that are gluten free. Check Hawk Vittles, Mary Jane's Farm, Enertia, and Pack-It-Gourmet. There are also many gluten-free food bars on the market - Kind Bars, Bumble Bars, Lara Bars, Hammer Bars, and more.
