its my first trip into the BWCA with a new diagnosis of celiac disease. Wondering if anybody out there has any ideas for gluten free food or know of any good resources?

Most food other than wheat, barley, and rye is gluten free in its natural state. Meat, fruits, vegetables, and most grains besides those three are naturally free of gluten. Processed food is where the problems come in - many processed foods contain gluten. Many sauces, additives, colorings, etc. use wheat as an ingredient. Most soy sauces for example contain wheat, although there are gluten-free ones. Other things to look out for - food starches (may be made from wheat), caramel coloring (may be made from wheat), barley malt, etc.


If you "google" celiac disease, you will find several helpful websites.


Rice, of course, is gluten-free and the basis of many world cuisines. Quinoa is another good gluten free grain. You can find gluten-free pastas. You can add beans, lentils, vegetables, fruits, seeds, and meat or fish. But be careful of processed meats like sausage and jerky. Even foil-packed meats with flavorings may be suspect.


There are some prepackaged dehydrated and freeze-dried meals that are gluten free. Check Hawk Vittles, Mary Jane's Farm, Enertia, and Pack-It-Gourmet. There are also many gluten-free food bars on the market - Kind Bars, Bumble Bars, Lara Bars, Hammer Bars, and more.
